What's with me and all these posts about about food? Anyway, I just had to share this great idea. It was not my idea. Maybe some of you have already figured this out, but it took visiting Colin's preschool class for me to learn something new to do with a plain old sub roll. Colin's class was doing the letter K the other day and they talked a little about Kangaroos. For their snack they were making "pouch sandwiches". So his teacher cuts a sub roll in half, the kids take the bread out of the middle and they had a little pocket to put in whatever they wanted. I thought it was so genius! I am having a meeting at my house today at noon so I told the ladies I'd make lunch. I made chicken salad and put it in these cute little bread pockets. I mean think if all the possibilities with this and how fun it will be for your kids (meatball subs, anyone?). No more sandwiches where the stuff all falls out the sides. Now it will be in a nice, neat little pocket. We're doing this for dinner tonight. I'll have everything out for sandwiches and the kids can stuff their bread pocket with whatever they want. I love it! I wish I would have thought if this sooner.....
